The Saint Pierre is caught mainly in Brittany and more precisely in Le Guilvinec and Concarneau.

500 tons are landed each year.

It is fished from march to november but mainly during april, june and july.

Recipe

Remove head, tail and fins. Cook in stock. Cut into four fillets and serve with a white sauce or a hollandaise sauce.
