Brown Shrimp Crangon Crangon

The brown shrimp designates the species Crangon crangon. This is the most fished species in France along with th crevette bouquet.

Live shrimps can't put up with ice and heat. When they are dead they become very lightly grey and when cooked, they become very shiny and slip through the fingers like grain.
